    • Coppa, or pork collar, is a highly marbled, tender, and flavorful cut taken from the top of the pork shoulder/neck area, often called the "king of the shoulder" or "money muscle". It is distinct from the loin, offering a rich, melt-in-your-mouth texture due to high intramuscular fat, ideal for roasting, smoking, or slicing into steaks. 

      • Our pork has color and flavor. 
      • It ain't supposed to be white, pasty, and rubbery.
      • Fed peanut, milo, alfalfa, hay, and forage.
